Happy St. Patrick's Day to all of you who are Irish, or pretending to be Irish, or who just want to have a Guinness and corned beef without guilt and be done with it. How much of me is actually Irish remains to be determined (one day I'm going to do a DNA test and find out), though I know I do have an Irish immigrant great-grandmother, but honestly, for me, St. Patrick's Day is all about one of my favorite meals. I wait all year for corned beef, because I am the only one in my family who likes it, and so I can't justify serving it more often. But next week I will be the only one home, and so I am making a HUGE portion of corned beef, and I am going to eat it ALL WEEK LONG.
I may be sick of it by then. :)
I also traditionally make a chocolate stout cake, which is a chocolate dessert that even I can get behind (I will almost always choose a dessert that is NOT chocolate). This morning's effort was a spectacular fail, I'm afraid (I will never make this cake in a bundt pan again), but it's easier to excuse eating the entire thing when it's in pieces ("What do you mean? I just had a bite!")
In any case, I intend to fully enjoy the day. I hope you do too!
